  • 400g tin of kidney beans, drained and rinsed
  • 400g tin of chopped tomatoes
  • 100ml beef stock
  • 6-8 large flour tortillas
  • Sea salt and freshly ground black pepper to taste

Grease an ovenproof dish with oil. Cut each tortilla into quarters and layer them in the dish to form a 'crust'. Pour over the mince filling and spread it out evenly.

Bake in an oven preheated to 180C/Gas 4 for 20-25 minutes or until golden brown on top. Serve with a dollop of sour cream or guacamole.

Cook for 8-10 minutes until the mince has browned and the onions are softened. Add the carrot, celery and spices, then cook for another few minutes before adding the tomatoes, beef stock, tomato purée and Worcestershire sauce. Bring to the boil, then reduce the heat and simmer for 30 minutes. Preheat your oven to 200C/180C fan/Gas 6. Roll out the puff pastry to about 5mm thick and cut out circles big enough to line 12 individual tart tins. Place the pastry circles into the tins and spoon in the mince mixture. Cut out some smaller circles for lids and place on top of each tart. Bake in the oven for 25 minutes until golden brown. Serve with mash or boiled vegetables.
